Ingredients Soft/medium-firm tofu 100 g, cut into small cubes ½ small cucumber, slice/cut into strips A pinch of salt Spring onion (optional) Seaweed shreds (optional) Dressing Fresh ginger, finely grated, 1–1.5 teaspoons Light soy sauce 3-5 teaspoons Rice vinegar/ lemon juice 1-2 teaspoons Toasted sesame oil 2-3 teaspoons Maple syrup/ sugar ½ teaspoon A pinch of toasted sesame seeds Chilli oil/grounded white pepper (optional) Cooking Instructions Cut tofu in cubes, drain and place on serving dish (Optional) Steam tofu for 5 minutes to warm it up Cut cucumber into slices or strips; lightly salt and gently squeeze out extra water.
